Trahanas and hilopites are traditionally made at the end of summer, when there is both milk and enough sun to dry them. With pulses, origin changes how they cook: Santorini fava (PDO) collapses into a purée without a blender, Prespes and Feneos giant beans hold their shape, and Eglouvi lentils from Lefkada need less time in the pot. This year’s crop, on sale from autumn, boils noticeably faster than older stock.
