Whole Sesame Tahini with Cocoa and Honey from Fylakto Evros 500 g

Our Story Aimos began in 2022 in Fylakto, Evros, northeastern Greece, with a small experimental plot of sesame. We wanted to understand the crop firsthand and work with an ingredient that we would be happy to bring to our own table. That first season became a learning process. We followed the plant through its different stages, gained experience with the cultivation of Greek sesame and gradually developed our own way of working with it. In 2023, our project became officially established as Aimos, with sesame at the heart of what we produce. Today, it is the starting point for our whole sesame tahini and our range of tahini based spreads. The Place Our sesame is grown in Fylakto, Evros, in the northeastern part of Greece. This is where our first trials began and where we continue to follow each growing season from sowing through to harvest. For us, production begins in the field rather than in the workshop. Being involved in the cultivation means knowing the sesame we work with from its earliest stage and following its journey before it becomes the finished product in the jar. How We Work The process starts with preparing the field and sowing the sesame. Rather than relying only on fixed calendar dates, we observe the crop and wait until the seeds reach the right stage of maturity before harvesting. The sesame is then cleaned and sorted by hand. Cultivation is mainly handled by Antonia’s husband, drawing on his experience in the field. From harvest onward, Antonia Kitsiou, the registered producer behind Aimos, takes over the next stages of the process, all the way through production and final labelling. For our tahini, the sesame is roasted for a carefully selected amount of time and at a controlled temperature to develop the aroma, colour and flavour we are looking for. Alongside our classic whole sesame tahini, we also make tahini based spreads developed through repeated recipe testing. Some of our newer combinations include fruit, with no added additives or artificial colours, while the remaining ingredients are sourced from Greek producers and businesses we know and select ourselves.
